Baking With Kids – Gluten Free Banana Bread

This amazing single serve gluten free banana bread is simple, filled with nutrients, dairy free, and even free of processed sugar! It’s a quick and delicious recipe that you can feel great about serving to your family any time of the day.

  • 1 Banana, peeled and mashed
  • 1 Tbsp. Nut Butter of Choice
  • 1 Pinch Himalayan Pink Salt
  • 1 tsp Organic Cinnamon
  • 1/4 tsp. Baking Soda
  • 1 Egg (see notes for substitution options)
  • 1/2 tsp. Vanilla (optional, but tasty!)
  • 1 Tbsp. Organic Green Banana Flour (optional)

Preheat oven to 350°F. Stir all ingredients together in a single serve oven proof dish or mug and bake for approximately 30 minutes, or until well set.

  1. To omit the egg, you may use a Flax or Chia Egg in its place. We have found this to work well in most recipes. Simply mix 1 Tbsp. Ground Flax Seed (meal) OR 1 Tbsp. Ground Chia Seed with 3 Tbsp. Filtered Water. Stir well and let this mixture sit until it reaches egg consistency. This usually happens within a couple of minutes. Then mix this egg substitute in with the other ingredients and bake.
  2. If you want to simplify clean up a bit, mix the ingredients all in one bowl and then pour the mixture into a different bowl that is lightly greased with organic avocado oil prior to baking.

Now, here’s a tip we just can’t wait to share with you!

If you happen to enjoy chocolate and are looking for a delicious and healthy chocolate chip replacement, you simply HAVE to get some of these crunchy health-filled goodies into your pantry: Organic Cacao Nibs! They also happen to be fiber rich, anti-inflammatory, and chock full of antioxidants to boost your immunity! Simply stir or sprinkle 1 Tbsp. Cacao Nibs into this recipe prior to baking to add an extra delicious nutritional punch. For more info on Cacao vs Cocoa, be sure to check out this Pantry Pick.

If you’re looking for yet another way to boost nutritional value, stir 1 Tbsp. Coconut Flakes into the batter or sprinkle some on top of your bread after baking. Yum!

And as always, we recommend using organic ingredients whenever possible.
