For today’s post, I have something of a story to share with you. I’m going let you in on a few secrets about me (including one of my pet peeves.)
When this recipe was born it about blew me away. You see, I had seen a recipe online that gave me an idea…
Now if you know me well, perhaps that won’t come as a complete surprise to you. As Jarrod sometimes says, “To Anita, a recipe is merely a suggestion.” And I don’t know how this happened, exactly. Perhaps it was the fact that I was raised in my family’s restaurant, or that I watched my parents cook our meals daily in our home. Or maybe it could have been all the cooking shows I watched in my early 20s. Maybe it’s a gifting that was enhanced by a combo of all of these?
At any rate, I can honestly say that it’s true. I never make a recipe the way it is written. Because when I see a recipe something just happens and…
I automatically start dreaming of new, simple, & healthy ways to improve it.
And that’s how many of my food creations are born. But regardless of how this happened to me, I am very thankful to be able to share these creations with you, because I completely understand just how frustrating it can be to look up a healthy recipe for our family online, find an interesting looking one and click on it, and then read through the ingredients list only to discover…..
“Are you KIDDING me!? This one isn’t healthy EITHER!”
And it even SAID “healthy” right there in the title! Ugh!
There were so many times that I needed a resource I could trust. Someone who’s site I could visit and know that they had my best interest at heart; that they truly cared about me and my well being, and would therefore always do their best to post only the things that would help me on my journey to wellness. That’s one of the many reasons we decided to create this site. We want you to know that our goal is to always be a source that you can trust to cheer you on and guide you in right, balanced, and delicious paths as you journey to your dream health destination!
Now let’s move on to the delicious part. As I’ve said, this one came as a fantastic surprise!
Pecan Pie Pralines
OK, friends…These little bits of goodness are amazing! Just imagine a little bite of Pecan Pie Heaven that is healthy and delicious. And this part, well, you may even find it the most wonderful part of the whole thing just like I did!
When you make them on parchment paper and pop them into the freezer, something near miraculous happens and low and behold out comes a creation that tastes like a Pecan PRALINE! Oh, YUM!
- 3 Cups Pecans
- 3/4 Cup Pitted Medjool Dates
- 1 Teaspoon Pure Organic Vanilla
- 1/4 Teaspoon Himalayan Pint Salt
- 1 Drop Organic Maple Flavoring (We love Frontier Brand)
Place ingredients into your food processor and blend until the mixture resembles a cookie dough with small pecan pieces. (Make sure not to process these too long or your pecans will turn into pecan butter and the entire mixture could get quite greasy, which wouldn’t taste bad but may not look as nice. BUT, having said that, if you are going more for the frozen version that tastes Buttery like a Praline, you may want to blend the mixture a bit longer until it is a slightly shiny, which will give you more of the butteriness of a Praline.)
Drop dough into balls onto parchment paper as in the photo above. Press out into cookie shapes, about 1/4 inch thick. You may eat these right away. They will be a bit sticky like pecan pie and taste oh SO good.
But wait…I forgot to tell you how long and on which temp to bake them. Oh, yeah….SURPRISE! They are raw so there is no need to bake them at all!
It is super quick and easy to mix up a batch of these lovelies whenever you are longing for just a little something sweet and healthy.
OH, and don’t forget, if you want something similar to a Pecan Pralines in flavor, do yourself a huge favor and pop these puppies into the freezer for several hours until they are nicely frozen. Then find your happy place, relax, and enjoy!
