Perhaps you’ve heard that you have to give up carbs in order to lose weight.
This couldn’t be further from the truth!
Do you probably need to give up the way that you’ve been doing things and find a better way? Yes. But giving up carbs is NOT the answer. Jarrod and I know this because we are living in a balanced way and have been for years. We are healthy and have lost weight and kept it off. And we get to enjoy our lives every single day, and our lives, well, they include…..you guessed it…CARBS.
We’ve said it once, and we’ll say it again:
Carbs are NOT the devil they’ve been made out to be
Your bodies were made to need carbs in order to function properly. And when you don’t get them, well you may find that you do ok for a while, and perhaps you might even feel a bit better at first (there’s a reason for that, and the reason is not that all carbs are bad). But in the end going off carbs just doesn’t work, and as you know from your previous experiences, there’s a strong tendency to finally go crazy on those things you have been told you can’t have. And not to mention, losing carbs is simply not a healthy balanced way to live.
And that’s why we love sharing healthy dessert options with you!
Because after all, why should you ever have to live for a “cheat day,” when you could be living a life that is enjoyable every… single… day?
So without further ado, let us introduce to you one of our favorite treats,
You are going to love it!
- 2 cans full fat organic coconut milk (We have found the Thai Kitchen Organic works well)
- 1/2 Cup Raw Organic Cacao Powder
- 1/4 Teaspoon Himalayan Pink Salt
- 1 Teaspoon Organic Pure Vanilla
- Sweetener Of Your Choice To Taste (We prefer date syrup for this recipe, and use approximately 3 Tablespoons.)
First, place 2 cans of coconut milk into the refrigerator overnight. This helps the cream to rise to the top and firm up, so that you get the mousse consistency that you are after. 🙂 Be sure not to shake the cans.
The next day carefully remove the cans of milk from the refrigerator. Open each can and carefully scoop the cream off the top and place this cream into a mixing bowl. Leave the clear coconut liquid in the can, do not add it to your mixing bowl. (This liquid will make a great addition to your next smoothie).
Add cacao (sift the cacao into the bowl to avoid lumps), salt, vanilla, and your sweetener to the bowl. Always err on the side of less sweetener as you can add more, a bit at a time after mixing.
And last, simply mix all of the ingredients with your hand mixer until it is light and fluffy. You may eat the mousse now, or for an even firmer texture, cover and refrigerate for a couple of hours.
